I like a submission because the other fighter is actually quittng as opposed to te fight being stopped by the official. KO's are good fun too, but unles it is a KTFO situation, there is room to argue the fight was stopped too soon. You tap and there shoul be no argument...you lose.
Submission takes more skill and doesn't hurt the opponent. It may not appear as exciting, but it leaves me with a better feeling for watching something that can get brutal.

A knock out is a definitive victory, you took the guy out so he couldn't continue. When no referee or judge needs to be involved, makes it more fair and you don't get any lame excuses from your opponent aftarwards. Although, a full fight that goes to decision is a longer entertainment. If you submit someone so he taps without he being hurt or bruised can also lead to excuses, so a knock out victory should shut them up.
