It gets me in toruble when people ask how to make something. I dont have an exact answer and NOTHING ever tastes the same. Sam The Cooking Guy says you shouldnt have to measure...its not rocket science! Ill post a video from him here and a really good recipe! -

I wouldn't say that I wing it.I've been cooking for such a long time,I can just look and tell when I have the right amount of spices.But every now and then,when I do need to be exact,I will measure.I have a reicipe in here,you should check it out.It's under 30 min meals. -

Answered I measure, then season to taste.
Spicy food can be tricky. I find that "cooking in" the spice tends to add a more subtle and better incorporation of flavor. Over spicing will change the recipe, sometimes it can ruin it. So, on the first pass, measure so you know what to do the next time you prepare the dish. -

When my parents taught me to cook, they had me take a deep smell of each spice and herb on the shelves at the store. (at that time, there were no safety seals) By smelling them, I learned their flavors, and how pungent each was. So, with that knowledge, they taught me to add spices, not by a recipe, but by my memory of what I felt would taste best. I've had a lot of success with that, and, many horrible failures also, but, it has always been interesting. -
