Milk is easy to replace with vegan milks (i prefer them over animal milk). But cheese is harder. The soy or nut cheeses don't taste as good.

I'm a diabetic so I need to eat a balanced diet of protein AND vegetables etc.. In order to stay stable and I don't get enough from nuts and eggs alone.

Are you required to eat animal protein? Soy contains nearly the same amount of protein as meat and is a complete protein. Vegans are more likely to eat a balanced diet with protein, fat, and carbs than omnivores.
