Where are the tamales? Homemade tamales are true holiday foods, they are somewhat difficult to make right, like lefse and lutefisk (Scandinavian) or other special dishes.

Oh man! Don't right, Chicken Mole is incredible. I remember being terrified the first time I tried it - Chocolate on Chicken? It sounds weird to the uninitiated, but it's basically just a BBQ sauce - sweet and tangy.

Actually it is pollo releno con especias arroz y verduras. hehe Not sure if I got all that right. But it is stuffed chicken with spiced rice and veggies.

I'm currently in Europe and the thing I miss the most about life in Arizona was good Mexican food and guacamole. I haven't seen a single avocado here. No one has even heard of them. When I go home for Christmas, I'm pretty much having a 4 week Mexican food binge.
