What is the best way to prepare fresh Salmon or Tuna?

I love fresh Atlantic Salmon and Tuna....but don't have very many recipes for preparing it.My wife has numerous...but then...she was born in Hawaii...and learned from the ground up from her Grandmother and Mother. What I am interested in is finding out how you prepare it...and if you will share your recipes with me.

    best is fresh red sanpper, blue fin tuna-toro, and yellow fin for us here on gulf coast.

    Marinated w/ my hubby's special marinade and grilled in tin foil.

    Never liked either much. But, Marinate it in Maker's Mark and cayenne pepper with lemon overnight in the frig, wrap in foil with sweet onion hollowed out and filled with garlic and cover with sliced jalopenos and broil it for 30 minutes on the lower rack.

    And I do love it raw, thinly sliced and chilled...but I am actually looking for newer recipes...Thanks for the advice...

    I've never had fresh tuna, but fresh salmon is good poached in white wine or grilled with a honey mustard glaze.

    And believe it or not....I really am a Poet. I was Poet Laureate of my High School...and attempted to turn it into a career of sorts. I actually registered as a Professional BMI Songwriter under the mistaken assumption that anyone who could write Poetry, could definitely write better songs than what I was hearing on the Radio. LOL Thanks for the answer.

    Never really cared for Salmon. Mom used to broil tuna steaks and canned Bonita when we were lucky enough to catch it. I could eat broiled Halibut and Grouper forever though. steaks canned bonita lucky catch eat broiled halibut grouper broiled Halibut steak

    I've never had grouper (mainly because of the name). Is it a mild fish?

    Grouper has a mild flavor, similar to bass or halibut. There are several varities, what I've eaten has been black grouper. Goes well with good friends and cold beer.

    Very good and thank you for the answer. I also like Lime Juice with a rub that inclides grated, fresh garlic with a decent Dry White to wash it down.

    The Grouper is a deep water fish...mild and with very flakey white meat.

    Yes...I have gone Salmon Fishing in Northern California during the Annual Runs...and love it...but Tuna...especially the big Blues are something else. Love them.

    I'm not sure about the spelling... it's in the tuna family, we used to love getting into a school of them. They'd hit our lines hard and fast, real fighters. We never took our limit, two or three were all we could eat, at 20-40lbs. each, that's a lot of tuna! We'd cook one in steaks on the grill, then can the rest. Best tuna salad I've ever eaten. I'd eat a pint jar with soda crackers and milk after school, then Mom would chew my butt for spoiling my dinner...yea right. I ate like I had a hollow leg.

    I do use that, but I also add Berringers White Zinfadel about three tablespoons and baste the fish constantly. delicious....thanks for you answer

    My family (Mom included) thinks I make the best salmon they've ever had.
    All I do is take a fillet (the whole side of a fish) place it on tin foil, add about 1/2 stick butter, minced garlic, chopped onion and top it with lots and lots of cajun spice, lemon pepper and red pepper.
    Enclose and seal with another piece of tin foil, place on grill on medium heat until flakey.
    Pick it up and rock back and forth every few minutes to spread the melted butter around.

    I like my salmon so many different ways but, my favorite way is baked with olive oil, blackened seasoning, a dash of lemon pepper seasoning with a touch of fresh squeezed lemon juice. covered with foil backed at 320. that is not only flavorful but melts in your mouth. OMG - now, I want it for dinner tonight. thanks Rocky
