Water Cafe Opens in NYC: Reasonable or Ridiculous?

We love niche food stores. But an entire café devoted to water? That seems a little over the top to us.

Last week, the Molecule Water Café opened in New York City’s East Village. On a basic level, the shop sells filtered tap water—$2.50 for a 16-ounce glass bottle (only $1 for up to 50 ounces in your own container.) According to The Wall Street Journal, the tap water is streamed “through a $25,000 filtering machine that uses ultraviolet rays, ozone treatments and reverse osmosis in a seven-stage processing treatment to create what they call pure H20.”

For an additional cost, you can purchase water infused with pH and electrolytes, vitamins and supplements, or all natural blends. NYC residents can also get 3 and 5-gallon jugs of Molecule’s “pharmaceutical grade water” delivered to their homes by tricycle. So far, reports have varied regarding whether Molecule’s water really tastes all the different from a water bottle or even unfiltered tap water. “I mean it's subtle, but if you have a sensitive palate you can totally tell," said co-owner Adam Ruhf.

But beyond taste, Molecule claims that their water is safer than regular NYC tap water. The company’s website states, “Current reports show NYC tap water to contain a variety of dangerous chemicals, including Chloropicrin, Trihalomethane, Dalapon and lsophorone- all extremely toxic. Not to mention fluoride and chlorine, about which you can make up your mind.”

However, NYC officials strongly disagree with their claims. Christopher Gilbride, a spokesman for the New York City Department of Environmental Protection said, "Public health experts agree that New York City tap water is among the safest, highest quality in the world, a standard we confirm through more than 500,000 tests each year."

We’re sure Molecule’s water is totally awesome. But we’re just not convinced that a water café is going to succeed in this tough economic climate. But then again, maybe this kind of thing can fly in the East Village and we'll see the development of new water connoisseurs.

    Bitch, what?? Water is free and should stay that way! Unless it's already packaged in a bottle, but that's besides the point! Tap water needs to stay free!

    Tap water is not free there is a monthly water electric, and trash bill. it costs where i live $80 a month for them to take your trash away. Infact out city did some stupid project and now the water bill is like 125 or 150 cant remember right now. lets say just for the sake of argument you use 5mins worth of faucet use for drinking.

    The only places that might need better water filtration are the backwoods of middle America. There are some areas where the tap water isn't always safe to drink - from this article, I doubt NYC is one of them.

    If you were concerned about safety of NYC water, just buy a filter, or bottled water. $2.50 for a 16 oz bottle is crazy!

    By the way... Their logo is stupid. The "O" in it is meant to look like a molecule, but they should have at least made it a WATER molecule. That would mean only 3 atoms (1 Oxygen and 2 Hydrogen), with the "O" being the Oxygen atom, and 2 small Hydrogen atoms attached to it.

    Come on, Starbucks sells heat tap water that's been passed over ground coffee beans for more than that for a 16oz glass. What's wrong with that?
    Actually, pure ph 7 deionized water (which we have in the lab) doesn't taste so good and (to me at least) has bit of a metallic taste. It's OK for tea and coffee and doesn't scale up the coffee maker.

    I'm not sure how they "infuse with pH"...perhaps with a bit of lemon juice, acetic acid, or just bubble in some CO2 to lower the pH a bit (i.e. make a soda), or perhaps they add some NaOH (i.e. lye) to increase the pH to get that soapy taste!

    I met ridiculous, first the cost of bottle water, to plasitc use for the water, I thought we
    where trying to get away from using plastic bottles, SO MUCH FOR GREEN engery they keep pushing down everyone ones throught.

    I'm sure people would go there who buys water all of the time; however, I think it would be a waste of money as I doubt their water really is all that different than other water.

    The only intriguing thing is water infused with vitamins. But then again, couldn't you just do that yourself to ordinary water :P

    Why is it people pay more for tap water in a designer bottle then a gallon a gas, yet nobody complains about that cost? So at $2.50 for a 16 oz glass bottle of water is equivalent to the cost of 5 GALLONS OF GAS!!!!!! WTF is wrong with that picture?!?!?!?!?
