I think being judged by a stereotype instead of on your own merits offends most people.

No, what offends me are networks who think they have to pander to ethnic communities to get viewers.

I honestly couldn't care less. And neither should anyone else. Stop being so thin-skinned and learn to laugh at it would be the advice I'd give.

My stereotype doesn't offend me. If I were living in another country I would try and learn their language just as I think people who live here in the US should learn English.

Being stereotyped is offensive, especially if you don't know me or know anything about me.

You mean the American white male? Apparently, if you watch commercials, certainly the recent Olympic ones, where the only person being thanked as caring or motivating of these young athletes is "mom," white males, whether they be husbands, fathers, or anything else today in advertising are being portrayed as clumsy, ignorant or some other punching bag.
I've grown weary of it. It's become a rather overt effort actually.

No! My mother was born and raised in Ireland. Our stereotype is that we like to drink. Anything wrong with that?

Sometimes. I don't mind characters who have some stereotypes of my nationality/ gender/ sub-culture/ ect; it's when a character has no personality outside those stereotypes that it's offensive. It also doesn't offend me when it's someone who shares that nationality/ gender/ sub-culture/ ect poking fun at it-- Canadian comedy, for example, does this about our culture all the time and it's hilarious, but when an American television series does this about Canadian culture, it's not funny.

It might be because there are fewer Asians in the States or something, but most Asian characters I come across tend to be very flat and I can guess whether they'll:

    die
have someone close to them die
    be a villain
    be a communist
    know martial arts
    no speak eengreesh well
    be a nerd
