Anything in the food industry seems to flourish! Gardening to harvesting to cleaning to selling to cooking to serving to eating. Many jobs created by food!
I've enjoyed an engineering career very much. It was challenging and frustrating, as answers to difficult problems don't come easy. Solving / supporting the answers to a design or test problem is very rewarding and can leave you with a lifetime of pride. There are far too few engineers because not enough students and guidance councelers have a good idea what they do. Last but not least, good engineers are paid well.
It's the medical and legal fields. Both of those fields will always keep you employed. If you plan on never losing your job, then get into one of those two fields. Doctors, lawyers, medical technologists, nurses and even police officers will always have a job. You'll always have criminals, and you'll always have sick people.
