A locally owned restaurant decided to put up a "Gay Friendly" sign on the front door to encourage the gay community to eat there alongside with their straight customers of their business, was it really necessary to this ?

Are you being sarcastic about the last statement about gays?
Couples behave differently than people of different beliefs, etc. So there's a difference in knowing where you can go and feel comfortable to act as you wish.
Knowing that the restaurant is specifically welcoming allows many to feel at ease just being comfortable with who they are.
Knowing this actually lets a lot of them act like regular people.
But, there are clearly things that you do that physically indicates when you're a couple that aren't over the top but are clear.
I feel like, also, you think that the sign is meant to promote an exclusive clientele, where it seems to be about ensuring the LGBT community knows that they can come in and act how you want alongside with the straight local clientele.
I think that the difficulty is that you're viewing it from the perspective of "this minority group" made up of individuals. Gay people would probably not feel the need for something like this to eat there alone. Knowing that they can go there with a significant other and not deal with glances, comments, etc. - which still happens - is a great relief.
Others aren't.
And unfortunately, in some places people need to be careful about understanding that.
In NYC, I generally feel no qualms about acting comfortably in most areas. But there are parts of the country I wouldn't. Sometimes, therefore, it is necessary to signal where a "safe space" is.
