This flavorful southern tomato gravy is an old fashioned way to make a fresh tomato sauce. Bacon drippings and flour make the roux for this simple tomato gravy. Serve tomato gravy with freshly baked biscuits, over mashed potatoes or cooked green beans, or with slices of meatloaf.
    Prep Time: 12 minutes
    Cook Time: 25 minutes
Total Time: 37 minutesYield: 2 Cups
    Ingredients:
    •4 tablespoons bacon drippings
    •4 tablespoons all-purpose flour
•2 large tomatoes, cored, peeled, chopped
    •1 1/2 to 2 1/2 cups cold water
1 tsp. sugar, 1 tsp. salt, 1/2 tsp. pepper
    Preparation:
In a heavy skillet heat the bacon drippings over medium-low heat. Add flour and seasonings and cook, stirring constantly, until medium brown in color. Do not let the flour burn. Stir in the tomatoes and 1 1/2 cups of the water. Cook, stirring occasionally, until reduced and thickened, about 25 to 35 minutes. Add more water as needed.
    Makes about 2 cups.

i think you are suppose to use a cast iron pan.

First you start with a old cast iron skillet, then add bacon grease, then have some southern sweet ice tea on hand, lots of gravy on hand and hot Crisco for frying. Grits can be served up with cheese, onions and garlic.

Grits are very simple its crushed corn, cornmeal In a small pot bring the water or milk to a boil pour in your grits stir continuously and thoroughly until your grits are well mixed.
Let the pot return to a boil and cover with a lid, lower the temperature, and let cook for 30 min. while you stir occasionally. add more water or milk as needed.Grits will be done when they have a smooth cream of wheat finish, Stir in the butter, bacon greace if you like for flavor, You can add anything you like.

Ok i do have a cast iron skillet. I made corn bread in it once. Is the crushed corn more coarse than regular cornmeal? This sounds so awesome i think i'm drooling a bit! Thank you so much for taking the time to give this info, I really appreciate it!
