I dont think id do a "restaurant", id do more of a catering like a food truck or something like that. that way im not limited by location and can go where the buisness is. Example: conventions, (alot of people usualy not many food options) with that being said it would mostly be asian but a few other cuisines as well.
Good question! I think a buffet-style place like Bishops, Furr's or Luby's would offer the greatest opportunity to do different dishes all the time. In the right part of town, it would really attract a lot of customers.
