    2 cups packed fresh basil leaves
    2 cloves garlic
    1/4 cup pine nuts
    2/3 cup extra-virgin olive oil, divided
    Kosher salt and freshly ground black pepper, to taste
    1/2 cup freshly grated Pecorino cheese (see Cook's Note)

    Directions


    Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper.



    If using immediately, add all the remaining oil and pulse until smooth. Transfer the pesto to a large serving bowl and mix in the cheese.



    If freezing, transfer to an air-tight container and drizzle remaining oil over the top. Freeze for up to 3 months. Thaw and stir in cheese.

    We make nice home-made pesto but we don't make it any more. Once, the day after eating it I got bacterial gastro and ended up in hospital. I know it's not the pesto's fault but I just can't stomach that dish any more.

    I love pesto but my basil supply is small so I have to buy it at the market. Do you g row your own garlic? That is quite easy to do too.

    i don't grow my own garlic - have never tried in fact ... the soil here is pretty dense and full of clay ... i'd bet that fairly loose soil would be best for garlic ... we've actually had some very weird looking carrots come out of our garden, because the dirt is so solid it stifles the growth ...

    I've grown garlic very successfully and our soil is clay too. Though our veggie garden got lots of compost.

    Sounds great. We're having our usual Sunday dinner. Ribeyes on the grill with baked taters, corn on the cob and a nice salad. Neither one of us is going to bed hungry tonite.

    yum - sounds terrific!!! a little blob of pesto on a rib eye would be great too!
