Do you think it is an invasion of privacy for a teacher to collect the notebooks from students?

Notebooks are for homework and notes, not for private stuff.

A great way to, if for no other reason, check the students' note taking abilities, and to ensure that they are taking notes. However, it should be made perfectly clear to the students - and parents - that checking notebooks is part of the learning and evaluation process.

It would depend on what you where doing with the note book if it was a personal one. If you where writing in it or reading whilst in the middle of a lesson. Then your not paying attention on what is going on.

But normal school note books containing your schoolwork then yes the Teacher has the right to collect them as it will be standard practice,

Students should expect to hand in notebook for any class.

I don't know the reason for this...it would seem the teacher would only collect class assignment notebooks for the purpose of grading them. How would the teacher know about other "personal" notebooks...

Depends what's in the notebooks. If it's just notes on the subject it's fine, but if it's used for journaling it's not.
