I grew the mint and my parents chickens supplied the egg yolks. It's really good.
This is the first time I made it. The ice cream has a natural green color too (not white or color green)
No ice and salt to worry about.
2 1/2 Cups Half and Half
8 egg yolks
1 cup sugar
2 1/2 cups whipping cream
4 teaspoons vanilla
pinch of salt
Heat half and half over medium heat until very hot but NOT boiling
Remove from heat
(I cooked the mint leaves in the half and half and let it set for 45 minutes and strained out mint leaves)
In bowl mix egg yolks and sugar until until well blended
Very gradually add hot half and half to egg/sugar mixture
mix until blended
return the mixture to the sauce pan and cook over medium heat until the mixture is steamy but NOT boiling.
Pour mixture into large bowl and stir in whipping cream
Cover and chill in fridge for at least 8 hours
pour in ice cream maker and make ice cream
(2 minutes before it's done I added small chunks of chocolate to the mint ice cream) You can add what ever you want to it.
I also put it in a air tight plastic container and let it chill in the freezer over night but you don't have to.
