Last night My Girlfriend made Panzanella I cooked Lamb Chops this is Panzanella

Panzanella

3 tablespoons good olive oil
1 small French bread or boule, cut into 1-inch cubes (6 cups)
1 teaspoon kosher salt
2 large, ripe tomatoes, cut into 1-inch cubes
1 hothouse cucumber, unpeeled, seeded, and sliced 1/2-inch thick
1 red bell pepper, seeded and cut into 1-inch cubes
1 yellow bell pepper, seeded and cut into 1-inch cubes
1/2 red onion, cut in 1/2 and thinly sliced
20 large basil leaves, coarsely chopped
3 tablespoons capers, drained
For the vinaigrette:
1 teaspoon finely minced garlic
1/2 teaspoon Dijon mustard
3 tablespoons Champagne vinegar
1/2 cup good olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Directions
Heat the oil in a large saute pan. Add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed.
For the vinaigrette, whisk all the ingredients together.
In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers. Add the bread cubes and toss with the vinaigrette. Season liberally with salt and pepper. Serve, or allow the salad to sit for about half an hour for the flavors to blend.



Lamb Chops

4 pounds top round lamb Shoulder
2 tablespoons minced garlic (4 to 5 cloves)
2 tablespoons minced fresh rosemary leaves
4 teaspoons minced fresh thyme leaves
1/2 cup mild olive oil
1/2 cup dry red wine
4 tablespoons red wine vinegar
Kosher salt
4 small red onions
4 pints cherry tomatoes
Wooden skewers
For the sauce:
1 cup good chicken stock
1/2 cup good olive oil
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon minced fresh rosemary leaves
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Directions
Cut the lamb in 1 1/2-inch cubes. You should have about 40 cubes. Combine the garlic, rosemary,thyme, olive oil, red wine, vinegar, and 1 teaspoon of salt in a medium bowl. Add the lamb cubes, cover with plastic wrap, and refrigerate overnight or for up to 2 days. Toss occasionally.
Heat a charcoal grill with coals. Spread the coals in 1 tight layer on the grill.
Cut the red onions in quarters and separate each quarter into 3 or 4 sections. Loosely thread 3 or 4 pieces of lamb alternately with sections of onion on skewers. Sprinkle both sides of the lamb with salt and pepper. Next place 4 or 5 cherry tomatoes on skewers, threading them through the stem of the tomato. Rub the tomatoes with olive oil and sprinkle with salt and pepper. First, place the lamb skewers on the hot grill and cook for 10 to 15 minutes, turning 2 or 3 times, until the lamb is medium rare. Approximately 5 minutes before the lamb is done, place the tomato skewers on the grill, turning once, until seared on the outside but still firm inside.
For the sauce, bring the chicken stock, olive oil, and lemon juice to a boil in a medium pot. Lower the heat and simmer for 5 minutes, until reduced in half. Add the rosemary, 1/2 teaspoon of salt, and the pepper. Serve the sauce on the side.

    A good addition to the lamb is a lemon dill sauce instead of Tziki (I know I spelled that wrong):
    sautee' a small handfull of sweet onions (diced) and garlic
    add cream and a dallup of dijon mustard and bring to a simmer
    add a couple of table spoons of dill
    squeeze half of one lemon

    Done!

    Oh and BTW - thanks for the idea.... I think I'm going to make lamb chops for dinner tongiht.

    I love the panzanella recipe..... looking it over to make it more economical (I know I'm cheap).
    Day old bread can be used.
    Red pepper instead of different types.
    Red wine vinegar (or plain) instead of the champaigne vinegar..... or just white wine.
    ground basil instead of fresh

    She raises sheep and goats for her own milk and meat consumption. She'll probably give me quite a bit If I dress them out.

    There are a couple of farms in western PA that sell their animals.
    I was thinking about getting a quarter cow but I don't have the freezer room for it.

    If you ever make a bulk meat purchase, make sure that they freeze it for you. Trying to freeze a large quantity of meat at home is too slow and will destroy the meat.

    I once had Nigerian goat head stew. I went to the diner with a Nigerian friend. I felt I had to validate my "Africanness" to him, so I couldn't back down like a punk. It was very delicious, but when I started pulling out big goat eyeballs it took all my cool awesomeness I could muster to not look "troubled". I ate it all down like a champ.

    I have no problem eating it now. I was raised by folk from the deep American south. My grand pa would catch and cook rabbit, squirrel, musk rat and opossum. I loved eating that stuff as a kid.
