Depends on who the peeps are and what I know about how they like to do things. Some want nothing and they mean it! Others like a side or BYOB. Whatever! And if I'm unsure I cook a favorite of mine that goes with most anything, like my delicious chilli or a fruit salad or a veggie tray. Maybe my Great Grandma's Mac and Cheese. Things like that.

Veggie burgers. Almost no one thinks to bring them, even though many people are vegans/vegetarians/can't eat red meat.

A cook out's a barbecue, right?
I'm a vegetarian so I usually bring whatever meat substitute I'll be eating. And an esky of soft drinks as well.
At Christmas and Easter the family has bigger barbecues, a whole lunch and dinner type thing - sometimes we even get there the night before to have breakfast with them. So we'll bring our meat and drinks, as well as potato bake or potato salad. Someone else always makes the cakes or biscuits.
