I like almost all cheese except the really smelly ones, but freshly made asadero (misspelled?) is one of my favorites. It is very different from what the sell in the stores. I usually eat jack or colby.

Every cheese in its time and place! Alone, with bread, crackers, meats, pasta; washed down with wine, beer or even whiskey; there are so many ways to enjoy a good cheese! I love to try new foods, especially new cheeses.

I am a huge fan of cheese, in general. But the American cheese better be melted, because there is nothing quite as horrid as cold American cheese.

Queso rallado like some mexican places put in tacos, burritos, etc. I think it could be a mix of cheddar and either jack or white colby. I even put it on burgers, hotdogs. Also parmesan on pasta and pizza.

My favorite is feta. As a dry cheese it is low calorie. It has such a strong cheesy taste that a little goes a long way, saving on calories and money.
