What is the ideal pet for an 8 year old, one that requires minimal up-keep and attention? Besides a pet rock, that is.

A red eared slider! Most pet stores sell them. I have one named Marvin and he's awesome. Very low maintanence, even less than a fish, and he's less likely to randomly croak.

I guess a goldfish, but so boring. Like a lot of things in this world you get what you put into it. I like my smart dog, intense loyalty to both my 8 yo and me (but a lot of work).

Believe it or not, domestic rats are calm and intelligent pets for children. The best pet my kids had. Gerbils and hamsters are a lot of work, and kind of dumb and nervous.
Every pet needs up-keep and attention, even a goldfish.

A cat/kitten. All you need is food, water, and a litterbox. Oh, teach this kid to show love /kindness towards the kitty.

Cats are the best. They teach children respect. A good cat will also be affectionate. Dogs are great, but they require just a bit more attention. Cats only need a loving environment and a litter box.

I did buy one for my sons when they were young.Bob was an ornery little monster that would hiss at me whenever I was near his tank. Score remains Mom 1-Bob 0 seeing as he's buried in the back yard of my old house AKA the pet cemetery.

yeah, if a pet of mine that I feed and care for hisses or bites me, they end up in the cemetery very fast.

Something like a hamster maybe. They do bite, but don't have to be handled a lot either.
A kitten is a good choice also.
