    first soaked for 2 hours in italian dressing in the fridge then grilled on the bbq. medium rare.

    Medium toward medium rare, though I'm dangerous with the fire on a BBQ grill. I often end up with steaks much more done than I prefer, even though I time them. LOL!

    I can help you with that! You just need a meat thermometer, take the meat off when it hits 170 degrees F inside, let it sit for 1-2 minutes, and you should have a perfect medium!

    What I need to do is to turn down the grill a bit more after I preheat, and let it cool a bit. Also, I should watch it, instead of just timing it, but I'm usually multitasking--making other stuff (sauteed mushrooms and sweet onions is one of my favorite steak accompaniments), so I hate to stand around watching the meat.

    Yeah, that will help. What some people don't know is that if you cook based on internal temp, you will get better results until you can eyeball it better. The only thing that will be different each time will be the char and carmelization on the outside, but the overall done-ness level will be the same.

    My brother and I split a half of beef, so my freezer is well stocked with hormone-free, antibiotic free, grain fed beef, too.

    Our ag teacher's family grow the beef--free range, but with grain added to the diet a few months before butchering. Definitely a small operation, and not with the additives and junk that you can expect in the beef from the store.

    Medium rare, in my opinion one sure fire way to ruin a steak is to overcook it. medium rare fillet mignon

    Medium well, so it has a little juice left but is not raw. I had a decent steak last week at the Outback. I had not had one since sometime last year. Hit the spot.
