You want a REAL WESTERN CHILI then the only ways to go are with Buffalo or Deer for your meat. They Both give the chili an excellent bite that is without compare.

My western chili has won several awards and the meat was the kicker for the win.

More than likely, no one has. Bison is labeled as Buffalo, but it is really a smaller, closely related relative to outhunted Buffalo.
