By the way all - it's OK to use canned pineapple but don't use fresh because the enzymes will prevent the jello from setting up.
Have you ever tasted Jello with shredded carrots in it?

| 3 oz. lemon or orange Jello 1 1/2 c. boiling water 1 c. crushed pineapple (8 3/4 oz. can) 1 tbsp. lemon juice 1 c. grated carrots 1/3 c. pecans or walnuts Dissolve Jello in water. Add pineapple, lemon juice, carrots, and nuts. Makes 6 salads. | |
